They make the ad physically bigger on the screen and give the searcher more reasons to click. Google decides for each search which assets to show, if any, and their expected impact feeds into Ad Rank. Adding them costs nothing extra; you still pay only for clicks. An ad with no assets is competing with one hand tied.
